Add shows, $70 set of two, got couple times never under $120, these have so much fat like a fatty brisket, when done there excellent but at $25 a rib raw, pretty pricey ! Mostly boon and fat. At 8.99 a pd wow it's high.

Living in Central Texas, I have had and smoked a lot of dino ribs. While I didn't have to trim too much off the top of these ribs, the fat layer next to the bone would not render . I left them on the smoker (7-8 hours) until I was worried about over cooking them, but there was a thick layer of gloopy fat . Both racks of the two pack were like that. The meat itself was decent, but I have never had that lower layer of fat not render.

Outstanding. Simply outstanding. 140° for 48 hrs.

The fat cap was removed I would like to see the fat cap left on for smoking

Very meaty and very tender. These ribs are hard to find.
