Overall Pretty good but...

so once trimmed these were pretty good I could deal with a big less fat under the top layer but its not like the butcher could see that. My only issue is the same as some others...you can't walk into the store and ask for these...the people will tell you they don't sell them which is a out right lie...either they dont want to do the work or they just dont know what they are...save yourself the trouble and just do curb side pick up.

Weird Fat

Living in Central Texas, I have had and smoked a lot of dino ribs. While I didn't have to trim too much off the top of these ribs, the fat layer next to the bone would not render . I left them on the smoker (7-8 hours) until I was worried about over cooking them, but there was a thick layer of gloopy fat . Both racks of the two pack were like that. The meat itself was decent, but I have never had that lower layer of fat not render.

Excellent

Picked up a rack this weekend. They don't put these in the meat case whole, so you'll have to ask one of the butchers to prepare them unsliced I Smoked them for 7 hours @250-280 and they were great!

Dino ribs

These things are so tasty. They do come in a 2 pack, lots of meat. The butcher had them trimmed perfect, just enough fat to keep the meat moist for 10 hours at 220°. I was very impressed on how good they were and will buy them again.

Poorly Butchered

Errant saw cut right through one of the ribs on the rack, and the other rack had a saw cut that was lengthwise about a quarter inch into one of the outer ribs.

Way too fatty

I was looking forward to these in a big way, picked up a cryovac bag of two plate ribs at my local Sams for $74. Neither was as large as expected and one was downright small. Smoked for 10 hours to an internal temp of 209. There were huge gobs of fat inside and the meat was stringy.

Terrible product.

Bought a package end of March. Smoked them today. I have never seen so much fat in my life. The actual yield of meat was approx. 6 oz. for each rib. We have 6 ribs. 36oz of actual meat. $110/36oz= $3.05 oz. or $48.88 a pound. Save your money and buy the Prime prime rib roast. I knew I had to cut the fat off to get to the face silver skin and expected that waste. Finally the meat was so marbled with fat that is would just drown your mouth with grease. Myself and a friend each tried to eat one and threw the other 4 away. Worst piece of meat I have purchased in my life. Shame on you Sam's for selling this crap. Maybe some were better for the reviewers who gave these a good rating but these was literally not edible.
