Great nine pounder of Prime rib sitting in our refrigerator aging with coarse salt cap ready for Xmas dinner. We aged ours last year for three weeks and it was delicious. Butcher told us this trick and it works, you may lose a pound of weight but well worth it.

I want to mark this 5 stars because the taste and quality were outstanding. My complaints are 1, You guys truss that thing with that terrible elastic, why can't I have the bones then, I would pay for the weight. 2, this thing was covered in small bone chips. Looked like glitter all over it. I washed it off for the most part but still super unpleasant to find in a bite of incredible quality meat.

Butcher gone wild!

I expected the roast to weight close to the 5 lbs shown in the picture. When one is paying around $20 per pound, it is rather important that the cost be somewhat accurate. I did curbside pickup. Imagine the surprise i had when i got home and found over 8 lbs of meat and a bill for over $160. The roast was excellent but i wouldn't think it is that hard to be more precise.

Placed an order and when my family returned to pick it up the order was no where to be found. They were told that they needed to place another order. I went to pick up the second order and when I complained to management I was told that the first order wasn't filled because the butcher was too lazy to fill the order. “Off” this year

This is a roast we make every year. This year the cut we had was “off”. I understand this meat should have marbling, but there was way too much fat on the cut we had. I really searched for a good cut in the case and they were all super fatty this year. Feel like we had to cut and throw away a big portion of this roast. Certainly not cheap. I will still try again next year because when it's leaner it's really delicious. Just iff this year.
