At first I was a little worried that there was too much fat in the beef but it trimmed up easily without too much loss and after cooking it at a simmer it was perfect for my vegetable beef soup. It was so tender and flavorful and not greasy at all. Thanks Sam, you do a great job on your meat!

Does NOT look as pictured! It took at least an hour to cut the large part of fat off. It wasted more than a third. The way this high fat meat was cut, it was difficult to trim the high fat content. Extremely disappointing. I will not purchase this again.

Meat on top was nice. Second layer was inedible garbage.

Aged beyond what the Sell By Date would suggest

Cut this up in tiny pieces for stroganoff and it's great to have some of the cutting already done.
