How Can You Use the USDA Choice Angus Beef for Stew?
When you're getting ready to make some beef stew, you really do need to make sure that you're always using only the very best ingredients. This particular cut is best prepared with moist heat, making this the ideal option for beef stew with 23g of protein per serving. While this product can help to make some easy beef stew, it's important to remember that it is certainly not the only way that you can use this meat. It's possible to make plenty of other tasty dishes. For example, you could use it to make some chili or soup.
Cooking Instructions
Thaw & Season: Thaw meat if frozen. Pat dry and season generously with salt, pepper, and desired spices.
Brown Meat (Recommended): In a heavy pot or Dutch oven, heat 1-2 tablespoons of oil over medium-high heat. Add the beef in batches and brown on all sides until a deep crust forms. This step adds rich flavor.
Add Liquid & Simmer: Return all browned beef to the pot. Add enough beef broth or water to mostly cover the meat. Bring it to a gentle simmer.
Cook Until Tender: Reduce the heat to low, cover the pot tightly, and cook for 2-3 hours on the stovetop or in a 300-325°F (150-163°C) oven, until the beef is fork-tender. If using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours.

Ingredients
- 2 lbs. Member's Mark USDA Choice Angus Beef Stew Meat
- 2 tbsp cooking oil (like olive or vegetable)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tsp dried thyme
- 1 bay leaf
- 1 lb. carrots, cut into 1-inch pieces
- 1 lb. potatoes (Yukon Gold or red), cut into 1-inch pieces
- Salt and pepper to taste
- Crusty bread for serving
Directions
1. Prep the Beef: If the meat is frozen, thaw it first. Pat the beef dry with paper towels. Season it well with salt and pepper.
2. Brown the Beef: Heat 1 tblsp of oil in a large pot (like a Dutch oven) over medium-high heat. Add the beef in batches and cook until it's nicely browned on all sides. Take it out and set aside.
3. Cook Aromatics: Add the rest of the oil to the pot if needed. Add the chopped onion and cook until soft (about 5-7 minutes). Stir in the minced garlic and tomato paste and cook for 1 minute more.
4. Simmer the Stew: Put the browned beef back into the pot. Pour in the beef broth. Add the thyme and bay leaf. Bring it to a gentle simmer. Lower the heat, cover the pot, and let it cook for 1.5 to 2 hours, or until the beef starts to get tender.
5. Add Veggies: Stir in the carrots and potatoes. Continue to simmer, covered, for another 45 minutes to 1 hour, until the vegetables are tender and the beef is perfectly soft.
6. Finish & Serve: Remove the bay leaf. Taste the stew and add more salt or pepper if needed. Serve hot in bowls with some crusty bread for dipping.
