Current supplier's quality is not up to standard. The grain in this roast went in so many different directions that it was nearly impossible to cut decent sirloins. Had to make much higher percentage of stew meat.

Sirloin Tip contained many internal membranes making a very tough once cooked. If the membranes are manually removed, the leftover meat is only suitable for stew or ground up into hamburger.

Bad 3+ pounds of waste.

I buy this because my husband loves steaks, and i was getting tired of paying the same price as this for an individual steak. This way I have multiple meals out of this one hunk of meat. My husband cuts it up to his desire thickness and the size that I prefer.

Cooked 11lb in oven for 2 hours, then sliced thin with meat slicer

Sirloin was easy to cut into small pieces and can. Makes easy to use and tasty starter for meals.

I used it to enhance a Mexican cheek barbacoa, and the outcome was excellent.
