I like it a lot. I use it to make beef jerky.

I own a meat slicer so I could custom cut what I wanted. I used a curing salt (curing salt for 24 hours) and course pepper. 200°F for about 2.5 hours. Made some darn good jerky!

Very fatty and a couple imperfections.

It was exactly what I was looking g for. The only issue and one of the packages weren't sealed all the way and spilled blood in my car.

Two weeks ago I went to the club in Midlothian bought big sirloin tip, over $40 bag after I got back home and open it we couldn't stand around stinky smell it was very bad, dump it in trash will never buy beef again from sams club

I trimmed the gristle, marinated the meat, cooked sous vide, sliced against the grain and after all that it was still flavorless and incredibly tough.
