Recipe: Roasted Rainbow Cauliflower and Cranberry Salad

Ingredients:

  • Roasted Rainbow Cauliflower and Cranberry Salad
  • 1 package of Taylor Farms Rainbow Cauliflower
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper to taste
  • Crumbled feta cheese (optional, for garnish)

Instructions:

  1. Preheat your oven to 425°F. Place the rainbow cauliflower florets on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat the florets evenly.
  2. Roast the cauliflower in the preheated oven for 20-25 minutes, or until they are tender and slightly browned, stirring once or twice for even roasting.
  3. While the cauliflower is roasting, in a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, honey, salt and pepper to create the dressing.
  4. Once the roasted cauliflower is done, let it cool for a few minutes.
  5. In a large salad bowl, combine the roasted cauliflower, dried cranberries, chopped nuts, red onion and fresh parsley.
  6. Drizzle the dressing over the salad and toss everything together until the ingredients are well coated.
