This is a wonderfully fine almond flour for your delicate baking needs. It does not have any skins included like cruder products labeled almond meal. My daughter loves the cookies we make for her with Blue Diamond Almond Flour.

The slightly nutty flavor adds an extra something to the pancakes and they always seem to be more substantial and filling than "regular" AP flour. Sometimes when I swap out flours I have a hard time keeping the same texture but this always makes great, fluffly pancakes. They do tend to brown a bit faster than AP flour so I keep the temp slightly lower and just watch them a bit more for the first few. Overall, I love this flour and use it as a special treat when I want to add some extra nutty flavor and a bit more substance than AP flour.

My favorite recipe is Keto Cornbread, which uses almond flour, sour cream, and lots of cheese!! I also make a Keto Cornbread Dressing using this almond flour instead of regular cornbread mix or boxed stuffing mix. My daughter prefers the almond flour cornbread and dressing to regular! Love the protein content in this flour and the flavor it adds to recipes. The consistency is not grainy and does not leave a weird texture when used for breading for chicken tenders, pork chops, or fried veggies! The fact that it’s gluten free is an added bonus!

Definitely recommend looking up almond flour recipes as their tons out there and great tips how to get it to set perfect. Flavor is excellent and obviously it's blue diamond so quality is excellent, overall it's a great almond flour.

Worked perfectly for Sunday fried chicken day. We couldn't be happier with how it tasted, even the teens loved it. We will use this more often than not now when making breads and frying stuff.
