Thank you for taking time to leave such a detailed review. The griddle top can be adjusted by turning the leveling nut on the griddle feet, to ensure positive flow of grease to the grease catch. The outside of the griddle especially closer to the front where the grease trap is, will be a little cooler than the areas over the burners. However, if you're experiencing large areas of temperature differences, here are some tips:- Preheat at lower temperatures and for a shorter period. This will give you greater control of your griddle temperature. You can also avoid wild temperature differences, by never adding a large amount of frozen food or cold water to a hot griddle.- Don’t overheat. You might get the urge to turn your burners up to "HIGH" when you use the Griddle, but don’t! Most only need to be set to “MED” to heat to over 500 degrees F.- Checking the levelling of your griddle can help ensure that the griddle top is receiving even heat distribution from the burners.All Member’s Mark items carry a 100% member satisfaction guarantee.
