We buy this cheese at least a few times a month. I've had it go moldy after a few weeks in the fridge before, but if I know i won't use a bunch, I put it in the freezer. Any shredded cheese that's open for weeks will go moldy. It still works perfectly out of the freezer.

Delicious Parmesan cheese. No preservatives. Good price too. I keep it in the freezer all the time since it defrosts so quickly. It lasts for a very long time. It will mold faster than cheese with preservatives if you leave it in the frig, put your hand inside, or leave it on the counter while you cook.

I ordered this product with an expiration date of four months away. After 4 weeks in the fridge, the cheese was moldy and had to be thrown out. I was disappointed. When I read the packaging closely, it says to use in 7 days after opening. I would not recommend this product unless you are going to use it in a month.

I have purchased this cheese for years and have never had a problem with it getting moldy. In the past 3 months I have had to throw away 2 of these containers because they grew mold practically overnight. I have always stored it in the refrigerator in the sealed container after opening. I don't know why this issue has just started happening for me, but I am very unhappy about it.

Been buying this product for years. Product was always soft and easy to use. Now, something has changed in the processing. The individual strands of cheese are longer and harder to work with. They are also not as soft……like they have been overly dried or left out in the air

Bought this thinking it was a good buy. NOT! Used this once for a pasta dish. A couple of weeks later went to use soe again the whole jar was green with mold. Threw out 90% of the product. Will never buybthis again, I don't understand all the 5 star reviews. I wouldn't recommend to my worse enemy.

Cheese was very dry with plastic texture. No taste at all. Did not taste good on pasta or salad. Had to throw it all out. I will stick to the smaller whole triangle I buy from local supermarket instead. Will not be buying again. It’s a great deal on price for the size but product did not work for us.

I didn't read the reviews here when I bought this cheese. After bringing it home, it immediately went in the fridge so I'm not sure what the issue was. I still had 2 months before the expiration date when the cheese began to mold. By the last time I went to use it the last time, it was way too moldy to use. I'm not sure why they use an expiration date AFTER the product goes bad.

I own a catering business and use this cheese all the time! I have never once found mold I am able to keep it in my refrigerator for a very long Maybe those that molded quickly the refrigerator's temperature was not high enough I don't understand it is the best Parmesan cheese my only thought is that the price went up considerably but because I've got so used to using it and my clients expected I will always continue to buy it

This cheese is excellent except that it molds months before you get near the expiration date. We follow all of the suggested hygiene guidelines but we find pockets of mold in the middle of the jar. That can not be from external contamination. That has to be present upon purchase. We end up throwing away 3/4 of the jar. We will not purchase this again.
