Pork Belly Burnt Ends!

After repeatedly asking my local store to carry they finally began to offer skinless pork belly for sale. Generally they appear to be skinned well and are of good quality. My only complaint is they are off sized and won't fit into a Foodsaver Bag for curing. (I make my own bacon) This requires me to trim them to size complicating the cure calculation a bit.

Was trying to make crispy skinned roast pork. Could not see through wrapping that there was no skin. My experimental dish still turned out well.

I used this slab of Pork Belly to make crispy skin Chinese Roast Pork. After cooking, I created more than 10 portions of Roast Pork.

I agree some can be fatty, but you just have to look at what you are buying . I usually quarter mine, rub and smoke it like a brisket. Then slice it and serve like a brisket. Incredible.
