Wonderful, tasty lamb. No strong odors or odd taste like found in some other chains Me<$& Yup, that's you- Best recipe we've done is a light coating of olive oil or your favorite marinade. get the grill up to 400 degrees. Brown the chops on both sides for a 2 minutes or so. Then, stand the chops up so that the backbone (top of the 'T') is on the grill. The chops will cook perfectly from the inside out! Serve at 120 degrees or more, no raw meat on the bone, just PERFECTION!!

Soak in a brine for about an hour before seasoning and putting on the grill.

Not enough fat on the chops for them to be appropriately marbled.
