Brisket is a definite favorite!

I smoked this one alongside a prime brisket I had already purchased to compared. My experience, the choice was not trimmed very well. The meat itself cooked and tasted the same. Im not sure the choice price matched a savings to the prime. Next time I will look it over more as I didn’t enjoy all the trimming.

Good brisket. I smoked this one with seasoning for 4 hrs, then put it in the sous vide at 140 degrees for 72 hours. I separated the point and flat. I cubed the point into 1 inch pieces, tossed in barbecue sauce and put the covered pan in the smoker at 350 degrees for an hour. The flat, I just sliced. MARVELOUS taste and tenderness!!
