Bum deal

Sam’s shouldn’t sell brisket. The underside of the pkg. hid the fact that there was a thick layer of fat all along the brisket. I couldn’t even cut the fat off the meat before planning on cooking it. I returned it. A day or two later I want to a grocery store to buy a brisket. Buying from Sam’s would have caused the price of brisket more expensive after factoring in what the cost of the fat would have mounted to.

Tons of fat

I got an 18 pound brisket for a great price, $2.50/pound. I used curbside pickup so I didn’t choose it myself. But I was shocked at how much fat was on this piece. I don’t mean marbling, I mean big hunks of solid white fat, up to 4 inches thick. After I trimmed the big chunks of fat off, I only had 12 pounds of brisket, and that was still quite fatty. That means I threw away 6 pounds of solid fat! It made great pastrami, but it was a lot of work to cut off all the excess fat.
