The flat part of the brisket was as thin as a pinky had to cut a lot of it off just so it doesn't burn in the smoker.

Top choice brisket! I smoked this on my pellet grill for 16 hours. It came out almost buttery smooth. I will do this again! A great tasty bit of beef!
