Ramen noodles are my "go to" pasta base for a number of dishes. I'm single, so the single-serving size is perfect. I toss the "flavor packet" (I have to watch sodium intake), and just use the noodles along with some frozen veggies and diced chicken or shrimp with some low-sodium Asian-flavor sauces (today's was a spicy peanut sauce). It's easy to have a satisfying meal ready in minutes -- I use a ramen cooker in the microwave, cook the noodles for 4 minutes, add the veggies, protein, and sauce, cover, and heat an additional minute. Perfection!
