I use these in soups, casseroles and pasta dishes. A little greasy when fried up (drain and pat dry with paper towels) but great flavor

I've always enjoyed Eckrich Hardwood Smoked Sausage, but the quality seems to have slipped. Found pieces of hard cartilage or bone in several of the links.

These are a good quality sausage and better than average. Use them frequently. A favorite is in a Sausage, Potato, Cabbage and Sauerkraut dish always popular.

We use them on crawfish boil and they have enough fat and texture to come out fat and plump!! The casings retract and sausage can of bellows out the ends so you have a handle in the middle
