Good deal, good results

I’ve been making yeast bread and quick breads with this flour, and the results are very good! I think the price (well, it recently went up with everything) is very good and that it’s an important item to have around. I did the math. Pasta is more expensive per pound, so why not get the flour and make bread? All you need is a simple acid/base reaction to get some bubbles going, or if you’re really in a pinch, make bread how it was done before commercial yeast was available and let it sit in a protected area to collect “wild yeast”. Bread is a science, but it’s not impossible. Where there’s a will, there’s a way! The flour is a great deal, and if you have a will, you will make some good food with it. That’s my take!

Quality, Reasonably Priced Product

I don't think of myself as being a flour connoisseur but after using this product to bake several items, it is, in my judgement as good, if not better than the higher priced, brand name flours out there. The best part is that it is very reasonably priced when compared to similar, name brand products.

Great quality AP flour

Great all purpose flour. I bake a lot and previously only used KA flour. I was pleasantly surprised by the quality and results I achieved with this flour. I have used the pizza flour for years and have great results.I have used it for biscuits, cobblers, quick bread, pancakes, gravies and rues, brownies, cookies. This flour has the same protein content as my previous flour, and that is what effects results.

Good for the basics, needs help for "fluffy" item

Good, but I want the PIZZA flour back!!! (the red bag). I find that the amount of gluten for making pizza and a fluffy bread is low and have to supplement with flour gluten. However this is a good constant flour for cakes, cookies and most standard baking.

Sourdough NO - yeast bread maybe

I almost lost my happy sourdough starter. Didn’t even think about the bleached flour affecting the sourdough. Had been using whole wheat and unbleached flour. I was lucky I had saved the discard and was able to feed the discard a couple times and get back to a happy bubbly jar of starter. I’m using this bag of flour by using about 20% wheat flour to make a preferment with the starter and wait a few hours to add this bleached flour with some gluten and a pinch of yeast because the sourdough starter dies in this flour. This might be fine flour for other baking or for yeast breads, so I gave it three stars. Won’t be buying it again for bread. Oh! I also sift it, even for bread.

Flour clumps in baked goods even after baking

You definitely have to sift this flour or you're going to stay with rocks of flour in your product after baking. You can especially see it in chocolate cake. I normally don't sift my flour. I use a stand up mixer. I've never had issues until I used this flour. I hate sifting but you definitely need to do it with this product.

Bring Back Dakota Maid!

This flour is horrible. Once again, Sam's Club in its infinite wisdom discontinues a popular brand in favor of their own lesser-quality brand. Any professional baker will tell you that unbleached flour is superior for taste and texture. This flour is not only bleached and bromated, but it is lumpy and must be sifted before it can be used. Why oh why did they switch? Price is not everything.

The packaging of this product is ridiculous. You need to go back to the original format for flour bags. you've been ruining my life with this bag for years now, please go back and make a real flour bag. My wife wants to save the$2 from the Walmart flour but the bag isn't worth saving any money. You can't open the bag and close it. The pour spout is completely useless. I think people must be emptying these 25lb bags into a bin. I use these 25lb bags regularly. The flour is clumpy and needs sifted, compared to the Walmart brand flour.
