These need to be trimmed of superfluous fat and silverskin, but careful knife-work, bold seasoning, and quick searing over charcoal or wood fire will pay off in the flavor and texture.

Overall, not that impressed with the butchery of the Columbia location lately. Prime packs of steaks are often a decent cut of meat along like a subpar cut. Choice grade packs funnily enough usually seem more equally packed with the exception of skirt steak. Skirt steak, expect a decent cut along with something that reflects a trimming which makes it a pain for timing if you want to grill both steaks at the same time.

I bought this to marinate and throw on the grill for fajitas. It was so tender and flavorful. Everyone said it was the best fajita meet ever!

This is the most tasteless meat we have ever bought. "Angus beef" has a nice sound to it - - sounds like it should be something deluxe. I knew that this could be a tough cut, and cooked it appropriately - - and it was not tough. The texture was fine. But the meat had all the flavor of cardboard. What a complete waste of money. We would have been better off with the cheapest hamburger from any store.

TERRIBLE!!!!! the fat underneath was thicker than the meat. I dont mind a little fat but this was ridiculous! by the time I got done cutting most of the fat off it was full of holes and less meat. Save your $$! your better off going to a carneceria. At least you know what you're getting and can pick your pieces! I expected better quality from Sam's especially for the expensive price!

5 dark spots on covered end of meat and has to trash it. Very upsetting

Meat was hard and very chewy after it was grilled. Not the best choice of meat when doing a carne asada too tough when eating it.
