This was such a hit at our taco party!! I used a special marinade and had it sit in my fridge overnight. Was sooooo good. Made a salsa verde and this was gone quick

I buy these all the time to make Fajitas. I remove the excess fat, cut them into strips, and cook them on my flat top grill with chicken, peppers, onion, and Fajita seasoning. They turn out so good I have to make extra because my family always wants me the next day. They are pretty lean, so trimming the fat isn't a huge deal. Prep time is about 15 minutes total including the chicken. Delicious!

Wish I had the option of outside skirt steak but this inside skirt is great for a hot and fast cook on the grill. Cut against the grain after it’s been grilled. Flexible cut of beef can be cooked medium rare to well done.

These need to be trimmed of superfluous fat and silverskin, but careful knife-work, bold seasoning, and quick searing over charcoal or wood fire will pay off in the flavor and texture.

Overall, not that impressed with the butchery of the Columbia location lately. Prime packs of steaks are often a decent cut of meat along like a subpar cut. Choice grade packs funnily enough usually seem more equally packed with the exception of skirt steak. Skirt steak, expect a decent cut along with something that reflects a trimming which makes it a pain for timing if you want to grill both steaks at the same time.

We typically buy the Members Mark Flank Steak for fajitas, but thought we would try the skirt steak for a change. The flavor was good, but it was definitely more tough than the flank steak.

I know that skirt steak is not the most tender cut of beef, but this particular cut was almost inedible--even after marinating and cooking to maximize tenderness. The cost of beef is already prohibitive (which is why I chose a "less expensive" cut in the first place), but I guess I will have to eat as a vegetarian until we get rid of the current administration.

Was happy to see Sam's Club carry skirt steak, but for some reason these steaks are very tough and rubbery. Hopefully Sam's Club will continue to carry them and I'll give it another try.

Super tough even after utilizing overnight tenderizing marinade. Exposed meat was well trimmed but underside not visible was not rimmed which resulted in 25% waste.

This butcher only displayed the nice part of the cut of meat. The underside of the meat was mostly fat. Over one pound of fat, once I weighed on a food scale. I was very upset and mad with this purchase. Very deceiving.
