Made carne asada taco’s from this & honestly it was a good cut of meat for it even though it isn’t the correct meat. I’d definitely use it again for them.

The inside skirt steak was very tough. Did not grill it long. Only gave it a char on both sides but I found it to be very tough and chewy. Would not buy again.

this steak is not good.it has a lot of silver skin on it. even after the painstaking task of removing it and marinating overnight it was tough and chewy no matter what temp it was cooked. I was literally chewing a small piece for minutes almost like chewing gum. We had a few pieces from whole foods that were butchered well and extremely tender. Never buying this cut here again.

This is just a PSA - cook it hot and fast up to medium rare, let it rest, and cut thinly against the grain. Otherwise it will be very hard to eat. The cut you want is the OUTSIDE skirt steak. Please consider this before purchase or you will be very disappointed. NOTE TO SAM'S CLUB — leave the inside skirt attached to the whole flap and then sell us the whole flap. The whole sirloin flap is pure glory if cooked low and slow. It is composed of the inner skirt, the flank, and the bavette. It's less work for Sam's Club too.

meat is so hard to bite, nothing soft, you eat it suffering and end up with jaw pain

Made Carnitas in the crock pot! Loved the cut and that there was not as much fat on them!
