I like to mix in about 1/3 whole grain flour for health purposes. This flour has given me the best results (and I've used all the name brands) at still keeping a cohesive texture while doing that (photo). It was a perfect texture when used alone.

I bake homemade bread and this flour is excellent. The only reason I would give it a 4/5 stars is because you can't buy it in a smaller amount than 25 lbs. The bag gets difficulty to lift and pour.
