Bought a prime brisket and smoked it 10 hours unwrapped at 180 then wrapped it. Another 5 hours at 180 then 2 hours at 200 and last hour at 225. 19 lb brisket for a total of 18 hours. Was very happy with the results on my pellet smoker. Wrapped it in butcher paper. Post will not let me add pictures for some reason but it looks and tastes amazing, if I can figure it out I will post pictures.

Good price and great cut of meat

A lot of excess fat on the underneath but it still tasted great smoked.
