I enjoyed the marbling on this brisket. The price was a little high to my liking, and the point to flat balance was off (im not a big fan of flat dominated briskets). Overall this brisket cooked pretty good, I would pull it at 195 as my flat was slightly too overcooked for my liking.

A Great Deal For The Backyard Smoker

Every now and then the meat department puts a few whole packers graded "prime" out in the meat coolers. They are generally smaller in weight than the "choice" briskets and that suites me fine because, even after trimming the bigger briskets are a lot for my small family. The prime briskets are better marbled and even though a dollar more per pound are still less expensive because they are typically 10 to 12 pounds in weight.

Buy the Prime grade, it is worth it

I purchased three of these briskets and all three of them did not disappoint. They smoked incredibly well. People gripe about having to cut off the fat, but they are just familiar with packer trim and the process that you have to go through to cook a brisket correctly. I was very satisfied that the trim was really not that excessive. The meat itself was incredibly tender. You can tell a real difference between Prime and Choice. It was well the small difference in price for the Prime. I will not go back to Choice when the price difference is that minimal. It does make a difference. The only thing I didn't like is that I ordered these online for pick-up so I didnt' get to pick them out. It really doesn't matter except for picking out the size. I was just making sure I got three because of the event that I was cooking for at that time. Again, all three cooked beautifully on my Traeger pellet grill. 12 hours or so and I only touched them when I pulled them off. Everyone at event raved about how great they tasted. Sam's pricing was cheaper than restaurant suppliers, so I will be going to Sam's when I need a brisket.

OOOOOOH! We passed on turkey and ham this year and went for the brisket. DO IT! We let the brisket marinade for a couple of days in the fridge and then threw it on the smoker for a few hours. Absolutely delicious flavor. We are never disappointed by our meat purchases at Sam's Club.

Absolutely aweful

This was without a doubt the worst brisket I have ever purchased anywhere. The amount of fat on the brisket was overwhelming. I have cooked many briskets, but this was the first from Sams Club. I trimmed the brisket just like what they do in Texas. With other briskets from regular supermarkets, I normally get raves from family and friends on my briskets, but not with this one. This one was trimmed carefully like all my other briskets, but, there was so much hidden fat, that eating the brisket was disgusting to everyone around the table. For Sams to claim this is prime is, honestly, laughable. When I cut into the brisket, fat that you could not see on the outside was all over the brisket; it was nothing to see fat that was 1-2 inches thick, 3-4 inches wide, and 6-7 inches long. Friends and family all commented that they were put off by the level of fat in this brisket. Not one of my guests ate more than a mouthful of brisket due to its high fat levels. If you need a brisket, don't get it from Sams; go to a butcher or simply get one from a regular supermarket. Don't waste your money on Sams brisket.

Trimmed it out, seasoned and smoked for 8 hours. Then sous vide for 72 hours at 140 degrees. After that, separate the flat and point and cut point into 1 inch cubes. Wrap flat in foil and keep warm. Toss in barbecue sauce and smoke at 350 degrees for 1 hour. Slice flat and serve cubed point for rave reviews 😊
