Never again

I can buy local wagyu, better than prime at $10.30 per pound. It is trimmed so well I can throw it straight on the smoker. The Sam's prime brisket I bought was 23.6 pounds. After trimming, it was 10.75lbs and my offset smoker still didn't render all the fat after a 14 hour cook (I should have taken another pound off lol). At face value, it's a good price, but the price of the usable meat is well over what higher quality options go for. Trim your briskets Sam's!

Thin parts and half of the fat cap gone

Half of the fat cap was gone, just bare meat, and trimmed uneven so there were thin spots towards the center, not just the edges and the flat. If you want this product, go into the store so you can see and pick your brisket, don't get it delivered to your car like I did.

Poor value

I purchased a 16 lb whole prime brisket this week. I've trimmed a LOT of whole briskets in my life and have never come close to the amount of fat this one had. The entire point end was solid fat/NO meat, and the flat end was probably close to normal. After trimming appropriately (leaving enough fat for flavor while smoking), I bagged everything and weighed it. I ended up with 113 ounces of pure fat from this brisket. That is 7 full pounds - so i ended up with 9 pounds of trimmed brisket. Nowhere near acceptable. It should have been closer to a 25%/75% ratios of fat to meat..
