Too much fat waste, by the time I was done trimming it was half the size.

We were disappointed. after trimming over half of the meat was fat. The amount left over to smoke was so small it was horrible. Will not be buying this product again.

Bought brisket for Christmas but ended up freezing it until Memorial Day. I was concerned about the time due to fat content but it was the best brisket I have ever smoked. Maybe 25% fat. Everyone was happy, even the cook.

Tender and always moist. Compared to my local butcher, I would take these every time. A real good cut of meat and with the usual amount of fat every time. Highly recommended by the native Texan.

Was the fattiest brisket I have ever cooked. It weighed 26lbs at purchase but I trimmed nearly 8lbs of fat off of it before smoking and it still had a sizable fat cap left to render in the smoker.
