Is prime really prime anymore?

Just got done with a 16 hour cook on a prime packer. Kept trimming to a minimum, but there was excessive marbling. While important to keep everything tender during low and slow, there was a lot of trimming of the point when done. For nearly $100 piece of prime meat, I should have seen good marbling with more meat in the point. However, it was delicious as always!

Too expensive for what you get now

Just isn't worth it for anything other than special events at $6/lb, especially when a third of the weight needs to be trimmed off because it was butchered so poorly to begin with... so it's really closer to $9/lb for what will be eaten unless you save the trim for ground beef. As far as the meat quality itself, it tends to range between 3 and 5 stars. I just trimmed three briskets and one had great marbling in the flat, while the other two could have been mistaken for choice. One of the three briskets also had a hole all the way through the flat that I could put my finger through (maybe hanging from a meat hook at one point?).

A FAT FEST FOR SURE

This brisket was 40% fat. A 20-pound brisket. I trimmed off 7.5 pounds, leaving me with 12.5 pounds of meat. That's $37 paid for fat. You gotta decide if that's worth your time.

Poor quality, lost almost half the brisket when cutting the fat before cooking. Package was deceiving, expected some fat but this was very deceiving. I won't be buying again.

To be fair, store personnel shopped for me since I picked up curbside. The brisket had too much fat, and was way too small. I froze it and bought a much larger one it at another store. I can’t comment on the taste as I have not cooked it yet
