Mostly fat........disappointing for USDA Prime whole brisket. This Prime whole brisket was the 5th I have purchased from Sam's Club and was the most disappointing. On a whole brisket I expect there to be a layer of fat in the middle of the point end. There was more fat than meat...at least 50% fat. I have cooked these briskets on my pellet smoker in the past with no issues, and yes I do know how to trim a brisket. In the future I will purchase just the flat.

Pretty tough for being prime beef

The packing plant wrecked the two prime briskets I purchased recently. The worst I've seen for packer briskets. The flats are very thin which means more aggressive trim and lower yeild. Huge gash in the point that effected the end product. Very disappointed in this product.

I recently bought a CASE of these. 77lbs. I understand that brisket looses a fair amount of weight through cooking and trim. But again… started with 77 lbs. after smoking I ended up with about 27 lbs. that is less than HALF for those of you counting. Not a big fan of spending $450 on brisket to get those kind of numbers. I am selling it as a business… so I’m barely making enough money to justify the purchase. I will not be buying anymore here for a while. Sure, quality is good. Nice fat marbling. Good taste. Just not enough.
