Half of the fat cap was gone, just bare meat, and trimmed uneven so there were thin spots towards the center, not just the edges and the flat. If you want this product, go into the store so you can see and pick your brisket, don't get it delivered to your car like I did.

Reasonably priced and very tasty. Applied rub and slow cooked at 225 degrees for 16 hours.

I generally buy 14 to 16 pound briskets and I've bought my share of them some choice and some prime. The choice seemed to have more fat content than the prime. I had to return one choice brisket due to over half of it in weight was fat.

This is a HUGE piece of meat. Don't think about this unless you are feeding a crowd. Cooked "low and slow", it was delicious. Not too much fat to trim.
