Awful

I didn't like that it's kind of tough. The first time I made spaghetti, I and my fiance were on the toilet with upset stomachs. He even blamed me for not making the spaghetti properly. The second time I used the ground beef, I made tacos. I once again had an upset stomach and was back on the toilet once again. I should of learned my lesson the first time.

I'm skeptical, I think I made a bad purchase

I bought this today because I had never seen it before. It sounded interesting. It's packaged as freshly ground in store, which it probably is, but I don't think that tells the whole story. I decided to search online for 88/12. It turns out Sam's Club is not the only store sellling 88/12. I found an article online that said the other big box store takes their 93/7 10 lb chubs and their steak fat trimmings that would be thrown away, and they create freshly ground 88/12. I'll have to ask the next time I'm in Sam's. I'm not sure that they would admit it if that's what they are doing, but it makes sense. The grind is extra fine for ground beef, which might indicate an extra pass through the grinder of already ground meat. For the amount of 88/12 they are selling, where is the beef coming from? Also, for a product that's supposedly 100% beef, what's with the "natural flavorings" in the ingredients? The beef I bought today had three days before you have to use or freeze it, but when I opened the package to portion it out and vacuum seal it for freezing, there was a bad smell. Also, underneath the label, the meat was already gray and there were gray "spots" within the beef. It's nowhere near as fresh as I expected it to be. I don't think it's rotten, but I don't think I'll be buying this again. There's something a little weird with this beef. I'm going back to buying 10 lb chubs of 80/20 which are a lot more reliable freshness and flavor-wise.
