Very sharp and tasty and will slice with cheese slicer with some crumbs – hold firmly. 
Use just a thin slice on crackers for all the sharp cheddar taste you want. 
Expensive but worth the price – you will eat less with the thin slicing. 
This is the sharpest cheddar available and is the cheese of choice from now on.

My family is so fond of this cheese that I have to keep it on hand at all times. When you crave a bite of cheese, this is what you want. However, the last time I was at Sam's they were sold out. I had to get something else similar which wasn't nearly as good, but it was half the price. Hope I can get Black Diamond next time I go shopping. It's expensive, but worth every penny.

Best Cheddar ever!

I used to love the Black Diamond Private Reserve Cheddar Cheese, but the last couple of times that I've bought it, I noticed that the cheese contains very tiny, hard bits in it, sort of like you've chewed on little bits of hard calcium or something like that. It really leaves an unpleasant, grainy, mouth feel, like something you need to spit out. That's the only way I can describe it. If anyone else experiences this, please report on it as well. The cheese is not smooth at all, as it should be, and like it used to be. I don't think I will buy this anymore.

Hard bits

I have been a fan of Black Diamond Private Reserve Cheddar for years.  Flavor is savory and creamy as you'd expect from aged cheddar, but the cheese does not fall apart like some others.  It is my favorite for anything demanding the rich, deep flavor of fine cheddar.  It used to be carried all the time at my Sam's, but now is available only by special order.  I'm just happy I can still get it!
