In our gummies, we use pectin rather than gelatin which is a thermal irreversible soluble to help gummies maintain their integrity such that they can be broken apart if they have compacted during transit. Conversely, gelatin gummies can overheat and congeal in transport or storage, such that they fuse together losing individual integrity.
