I make lots of dishes that call for extra sharp cheddar and I cut this in 3 pieces and freeze it so when I need cheese for say a quiche I have it.

Great value and great taste. I thought it would be too much, but our family went through it pretty quickly.

Always good but cheese just doesn't freeze well. Still good to use, but brittle/ flaky. Can't make cubes for serving.

This cheese has a great flavor. I cut it into 2 equal sized blocks and vacuum seal them for freezing.

Why is this cheese so dry and crumbly when previous purchases were not? I couldn't slice it without it completely breaking in small pieces Also, there was a little water inside the package when I opened it. Could it possibly have been frozen?

We have purchased many packages of this cheese but lately the "bad" version has been showing up more often - i.e. sometimes very salty, sometimes too "american" in texture (waxy, creamy), sometimes overly tangy versus sharp
