This is a great tasty kale salad!!

If I had to pick one meal to eat for the rest of my life, this would be in the running. Perfect summer side dish, but can be eaten as a meal also. Was hesitant to buy it at first, because Mediterranean usually implies olives (I hate olives), but I’m happy to report there are no olives in here!

I am so glad I gave this salad a try. The pasta to kale ratio is perfect and the sun-dried tomatoes/cheese just elevates the combo. We pair this with prepared chicken breast or rotisserie chicken for a quick lunch. I hope Sam’s keeps this in rotation for a while.

This Salad is off the chain every one love it in our family we just can’t get enough of it 😂😂 I add dry cranberries and croutons…. This is my lunch or dinner meal with a great salmon or a juicy steak…. When I buy it I have to buy 5 trays this salad never stay more than 48 hrs in the fridge…. So I really like this salad, however I tried it on an “off” day and fell in love with it. The off day didn’t contain feta cheese or roasted tomatoes/red pepper and it was amazing. i search for the variety with the least amount of these ingredients and get disappointed. I’m also a little disappointed with the amount of noodles, i wish there was more kale instead, would probably be a lot less fattening. Otherwise it is a pretty tasty salad, especially when honey smoked salmon is added!

I thought last time chicken was in it.

Kale was tough to chew. Perhaps wilting somehow would improve it. I ended up trying to remove the kale before eating the rest.
