Do not waste your time and money

Have bought this every year for summer barbeque, so disappointed, this roast has so much muscle and fat compared to the previous years. Took over an hour to pull one roast, with a definite reduction in viable meat. I will no longer purchase meat from Sam's Club if they are reducing to the lowest quality to replace the dependable meats from before

Green Tinge in Meat

I purchased two of these in November 2020 and both had a green tinge in the meat close to the bone. I had to toss a lot of the meat as I had never seen this before. I will probably not buy again in Cryovac. I suspect the meat was old or mishandled in transit. Did not check pack date. If not in a bind as I was cooking for a party, I would have returned to Sams for a refund.

TRY BONELESS WINGS WITH THIS

I know everyone likes their low and slow pork butt but 2 things everyone should try: 1. Just cut an inch piece and cook it like a steak. Better even if you then take those steaks and sous vide them for 24 hours, but the flavor is there either way. 2. Take a couple of those steaks, and cube them up into bite size pieces. Simply air fry your seasoned/marinated chunks for like 8 minutes, toss in buffalo sauce and dip in bleu cheese. IMO this is AS GOOD as chicken wings, leagues better than breaded boneless wings. Also extremely quick.

Too Much Fat

For 20 years or so, we have purchased boston butts for smoked bbq from Sam's Club. They were usually the best quality and nicely trimmed. We had great success with them. Approximately 4 years ago, the fat on the meat increased. With each year since, the fat has gotten thicker and thicker. The latest butts weighed 15 lbs and had almost 2 pounds of fat encasing them. These are generally larger pieces of meat than a regular grocer so I said I would recommend to a friend but it's disappointing to have that much fat let on the meat. These should be trimmed more closely so the customer is actually paying for the meat rather than the excess fat.

Excellent for ground pork.

There is a blade bone in this product. You will need a good narrow boning knife to cut the meat off of the bone. We get as close as we can, then bake the bones at 250 degrees for several hours to loosen the remaining meat from the bones. We pressure can that remaining meat and the juices that come from it. The meat we cut off the bone in the first place is pretty tough as Boston Butt is supposed to be. We run it through our meat grinder and make homemade ground pork. At this point, we either eat the ground pork plain, make sausage, etc. It's very versatile and we love processing our own meat this way. The last time my wife went to our Sam's, they were out of this, and a lady behind my wife was looking for some too. It appears this is getting to be quite the popular items at our local club.

I purchased several pork butts with the intention of making pulled pork for a large gathering I was having. This meat was the fattiest & toughest pork butts we ever experienced. After cooking them for just shy of 10hrs in a large crock pot I was so embarrassed to serve the meat, no taste. Very disappointed.

Excellent quality/value

Purchased a Boston Butt to smoke for pulled pork. The butt required very little trimming including the fat cap which was perfect @ 1/4 inch thickness. Excellent marbling throughout. After a 13 hour smoke the finished product was delicious, moist and flavorful. The small bone came out cleanly and the meat shredded with ease. I will certainly purchase these from Sam’s Club again.
