Skirt steak in my opinion is awful. I kept telling myself maybe I have picked up a wrong batch. But to be quite honest, it has been time after time that I purchase it and it is chewy and not tender at all. This last time I made up my mind to go to Fresh Market their Skirt Steak it amazing and worth the money.

A Little Tough to Chew

First time purchasing a Skirt Steak. I saw them cooking one on "The Kitchen" on the Food Network. It looked delicious. It was very good and had a great flavor. However, it was a little tough to chew. Maybe I should have cooked it a little slower, but I prepared it and cooked it the way they instructed on "The Kitchen".

Hidden fat!

Ive noticed the last few times i buy this product. That it comes with quite a bit fat. Which is hidden quite well, in how the meat is packaged. Thats why I dont buy it often. But aside from the fat, the meat is tender. And the price is high. Just like everything else.

Chewy and low quality

The bottom side of the steak was covered in silver skin, we had to basically finish butchering the meat before we could cook it. I never had skirt steak so chewy, it was good. I purchased something else because we couldn’t eat the meat. It was inedible.

Tough and tasteless

Usually this is my favorite cut of beef as it’s quick to cook by searing on the grill. Typically I get a nice char on the outside while it’s still med or med rare on the inside and it’s juicy and tender. This time it was just tough and tasted almost like cardboard. I don’t think it was my cooking method as I didn’t change anything.

Mighty Tough Flanks

I’ve been buying these the last 3 or 4 months now. So I believe I can rightfully give an honest opinion on these flanks from my Sams Club store. I have to say these flanks have an outstanding flavor. Unfortunately, these are consistently tougher than rawhide! I’m hoping it’s possibly being misrepresented as USDA Choice , when it’s certainly possible that it’s actually USDA Select. I’d hate to think this is what the USDA is now calling Choice. I will certainly continue to buy these flanks from Sam’s Club. I’m just going to keep trying different marinade recipes and tederizing methods. Let you know if I stumble into something.
