This banana bread mix is not good. It has a weird gummy texture no matter how long you bake it. I have tried two bananas, three bananas, adding a 1/2 c. sour cream and other tweaks trying to make it acceptable. It is barely worth eating. I love the pumpkin bread mix I get at Sam's. This one is disappointing.

I should have read directions before I buying this

We love banana bread here at our house, but unfortunately now that the kids are grown and gone we don't buy bananas as often as we might like to bake banana bread. When I saw this I thought "Aha - shortcut, bananas must be in here". BUT NO. When we got it and read the directions - shocker, it needs the same 2-3 whole bananas mashed up that the scratch recipe does. I had assumed since any blueberry muffin / bread recipe has its' own blueberries, chocolate baked goods come with the chocolate in them, poppyseed / spice bread boxed mixes have the seeds and spices, that this would have ground or flaked freeze dried bananas. Again BUT NO. All they do is add the sugar and baking powder ("leavening") to the flour. Also some soybean oil for some reason. Which is weird because all the banana bread scratch recipes I've seen claim with the fresh mashed bananas in there no oil is needed. Plus most want some buttermilk to react with the baking powder to put some "rise" into the mix. The is such a thing as powdered buttermilk (I've used it, it works "OK", but I prefer 3/4 cup plain yoghurt) but that apparently is too costly for these guys, they opted for plain powdered milk. Which may account for my first batch coming out flat / gummy as some have complained. My second batch I put in my usual 3/4 cup yoghurt (one of those 6 ounce plastic containers they sell for 70₵ to $1) and it was much better. And since Chiquita couldn't be bothered to actually put bananas in their banana bread, I used Fyffes bananas (!)
