Seems to be over 40% water content. We bake our bacon on racks in the oven. The most recent batch we bought shrank more than usual - almost half size after cooking. Still tasted good though.

I was disappointed in the downsizing of the cuts of bacon by each slice. It is noticeably thinner. I will give it one more purchase to look for correction before I will look for another source for my bacon.

We love this bacon. However, it is not sold at my local Sam's. I have to travel to another Sam's to purchase. Why did my local (Easley) store stop carrying this product?

We've tried several different bacons that Sam's has to offer and this one just seemed to have the best taste and the longest shelf life. We can make this last about three weeks.
