Prime Sirloin Steak

Went into Sam's wanting to try the highly rated Angus Top Sirloin steak family packs, however, having never been able to buy prime grade before, opted for these steaks instead. The package said these were top sirloin, however, on the internet, it just says sirloin. I don't think these are top sirloin, as they were on the chewy side. Really good steaky flavor, just a little chewier than I would have thought for prime "top" sirloin. In case you are wondering, I seared in skillet and finished in over to rare (was shooting for med rare but they are thick!)

The most underrated cut of beef!

When it comes to a delicious steak dinner, top sirloin doesn't exactly come to mind. Ribeye, NY strip, porterhouse, T-bone or filet mignon are more familiar, am I right? Not only is the sirloin steak the most underrated and underappreciated steak, it is also among the cheapest cut. Its secret? It is absolutely packed with flavor that even rivals the almighty ribeye! Especially prime sirloin! Here's what you do with a prime sirloin. Reverse sear it by cooking it on your grill at 225° for 30 minutes then bump up your grill temperature to 600° and then sear each side for 30 seconds. Pair it with some homemade mash potatoes, roasted carrots and a glass of your favorite cab. Can't decide on a cab? Start with Freakshow cab by Michael David Winery, available at Sam's (be sure to decant for at least an hour). The result is a lean cut of steak that stands up to a ribeye, but without as much fat and more money back in your pocket. Trust me on this one people.

Disappointing.

I ordered these for pickup while on "shelter in place". Had to cook them the same day because they were about to expire. Could barely pierce them with a fork when raw to help the marinade penetrate. Cooked them medium-rare, and they were tough and stringy. They were so bad, that ifwe weren't under "shelter in place" orders, I would have tossed them in a ziploc bag and returned them for a refund. Past PRIME is not the same as PRIME beef!
