Had a couple with lobster tails. Wife said better than restaurant. Let them come to room temperature. Rub with unsalted butter. Sprinkle with kosher salt and black pepper. Sear each side 3 minutes on very hot cast iron skillet. Sear edges a couple minutes. Insert thermometer and put cast iron skillet in 450 degree oven until steaks reach 130. Pull out and tent with aluminum foil for 5 minutes. Medium rare. They were great. Will be buying them again.
