The smokeless technology works by using the fan and having 2 cups of water in the water tray during the cooking process. If you do not use water or not enough water or over load the grill with food the smoke-less process will not work as seen on TV. You also need to ensure your lid is completely sealed over the grill, this helps with any smoke and seals in the flavor.  You need to ensure you are not using too much heat for prolonged periods of time as that will create smoke on any grill. Finally, you must make sure you clean the front and back of the grill/griddle plates to ensure no old food is stuck between the cracks.

Please make sure you always put 2 cups of water in the water tray, turn on the fan and use the lid during cooking.
