I went to baking school, and while there are definitely some really great high end cocoa brands out there, Hershey's is an affordable option that gets the job done. I like to use it in chocolate cakes and cupcakes.

Cacao is the unsweetened version of cocoa, i.e. its more pure, has a slightly bitter taste rather than sweet like drinking chocolate. A little goes a long way though so bitterness can be minimised by using half the cacao than would be used as cocoa.
