This is a really good price for 3 lbs of ground chicken, and it cooks well in pretty much anything. I used it for a soup and also for a Thai dish called gaipow (ground chicken with basil). The texture is a little on the fine side, but the flavor is still good, and it blended into the dishes nicely. I like that it comes on a tray and is easy to freeze if I’m not using it all at once. With the amount you get and how versatile it is, I’d definitely buy it again.

Not As Versatile As Turkey

I had high hopes for the Purdue Ground Chicken. It was okay when used in spaghetti sauce, but it didn't quite meet my expectations. We regularly cook with ground turkey, so I'm familiar with working with ground poultry and was looking forward to trying the chicken version. Texturally, it was quite different from ground turkey. While the surface showed strands of meat that looked promising—like a quality ground product that would hold its shape—everything beneath the top layer was a soggy, mushy lump with almost no texture. It also contained far too much moisture. I had trouble browning it. The excess liquid in the pan caused the meat to steam or poach rather than brown, and even after draining off some of the water, more kept seeping out. I never achieved that nicely browned texture or the rich flavor that comes from caramelization. Once simmered in the sauce, it continued to release liquid, further thinning the sauce. The flavor did improve after simmering for a while. Still, it was pretty bland at first—even though I had seasoned it generously with fresh garlic, granulated garlic, onion powder, black pepper, chili powder, seasoned salt, and sea salt. The seasonings enhanced the sauce overall, but the chicken didn't seem to absorb the flavors as well as ground turkey or beef typically does. I have one more package left and plan to try it in another preparation. Hopefully, it performs better in a different dish.

Many Bone Fragments in one of the packages I purchased. I purchase this item pretty often, however, one package was pretty loaded with bone fragments and the meal it was used for had to be discarded. It wouldn't be an exaggeration saying there wasn't a single bite taken that didn't contain at least one fragment of bone. Hoping this was an anomaly.

These are really good value, just be sure to use it or freeze it at least several days before the “best used by” date listed on the package. Even when unopened, I’ve had packages that are spoiled yet the package still shows two or three more days until the “best used by” date.
