Love this one. It has a smoky, aged taste. We wish it was 100% grass fed, but 80% is tons better and healthier then other brands. Disappointed that it's not available in San Antonio, Texas.

Just Right for my taste. Not too strong and not light. Texture is firm and it does not crumble to much. melts well. I love cheese. This was my first time trying this brand. The price is reasonable, the quality is excellent.

I know this is a very sharp cheese but... it seemed like it had a weird coating on it that I have never had on this cheese before. If I didn't live 2.5 hours away, I would have taken it back.

This is a dense, crumbly and oily cheese (relative to similar cheeses) with a moderate to strong taste. It does not melt as well as similar products, but the flavor stands up well to whatever it is served with. It is a premium cheese and should be showcased rather than mixed with other ingredients (due in part to its oiliness) in my opinion.
