This is the same cheese I used to be able to buy in the local store, cut off a wheel in whatever size I preferred. It's wonderfully sharp, with a dry, almost crumbly texture. It's my favorite cheddar.

My sister served this at a family gathering and now the entire family is hooked. We call it 'the good cheese'. Great for snacking and a killer grilled cheese sandwich.
