The peppers were all beautiful, fresh, and bright, but the skin was tougher than I have ever had with any sweet peppers before. Flavor was still great, and if they had been cooked longer, they might have been fine. We coked them only to crisp tender.

.. especially with Roasted Red Pepper Hummus - but all other dips as well. Small peppers in yellow, orange, and red that you can hold from the stem end and munch down to the seeds which are mostly by the stem. No need to cut them up first (but you can), which makes them very convenient. And they are sweet. Eat the red ones first, they are the ripest, but they will still taste good even if you keep them around after they start getting wrinkled.

Always check the produce before buying for mold and rot. The mini peppers are usually good and last for a good while in the fridge.
