Apart from the fact that once you finished cleaning it up, you would have removed a bit over 1 pound of fat (about $25 from the price you have paid), this is the creme of the creme of beef you can ever buy. It literally melts in your mouth and is so tasty! I have only one regret. Not to have started to buy this piece of meat sooner.

It was very expensive and so was the prime rib. I didn’t purchase prime rib this year.

Too much fat on the Prime meat

I asked the butcher if he could cut me a couple 1.5” prime fillets, he promptly told me to buy a whole loin. Since they sell it by the pound…I don’t understand the reasoning.

These are the best filets that I have found in a grocery store locally.
