The quality of the meat was great. Problem I had when ordering it online, I thought I was getting a 20lb brisket. When I picked it up, it was only 13. Didn't notice it till I got home so partly my fault but the advertising could have been better.

The meat was tasty and cooked well. The reason for average is the hidden fat. There was at least 5lbs of fat on the 13lb brisket. The meat quality itself was good. I will buy again at the ? price.

I see a lot of reviewers complained about fat content. Please, do your research first. This is a whole brisket, which means you are getting the flat (mostly lean) and the point (mostly fat). If you are looking for leaner cut, go for the more expensive brisket flat. I'm fine with this whole brisket, because I know how to deal with the fat. You first spend some time to trim the point and cut out most fat, which take a bit of time and patience, then you put the trimmed fat in a deep baking pan and oven roast it at 325F. The fat will come out as tallow. You collect the tallow, which weigh probably 1/3 to 1/4 of this whole brisket, and use it to make soap. You will get some of the nicest soap bars. Then you grill, smoke, stew or whatever the left over lean meat. That's the right way! Nothing gets wasted and you are spending less money.

Sam’s shouldn’t sell brisket. The underside of the pkg. hid the fact that there was a thick layer of fat all along the brisket. I couldn’t even cut the fat off the meat before planning on cooking it. I returned it. A day or two later I want to a grocery store to buy a brisket. Buying from Sam’s would have caused the price of brisket more expensive after factoring in what the cost of the fat would have mounted to.

Good brisket

I had intended to get a prime cut and accidently picked this up instead. This was not trimmed at all. I started with 16lbs and when I trimmed it (leaving 1/8" fat cap) I had 7 pounds of fat and 9 lbs of brisket to put in the smoker. Next time I will start with the trimmed prime cut SAMS offers and hopefully the small difference in price will meet my expectations. Marbling was ok and after cooking the brisket did turn out well.

The meat product was excellent. Well packaged for transport. The only issue was the number count in the box, the description indicated the box may range between 4-5 units depending upon weight. This package was used in a cooking contest, and it was one unit short. The box should state the Specific number of units instead of average weight. We needed 5 units but only received 4.
