Excellent for processing

Okay we ordered two bags and I must say this beef product is beautiful. Lots of silver skin to clean off but it’s expected for inexpensive meat. You can process this meat into fajita, minute steaks, cubed steak, excellent ground beef for burgers, spaghetti meat sauce, and lasagna, stir fry, country fried steaks, sub steak meat, and barbicoa. Endless possibilities. You must put in the work though since this isn’t a ribeye. But for those looking to stretch your food budget during inflation, this is the meat for you. Each bag is roughly 15lbs or so. You can use every single part for food applications. A special tip to slice across grain, remove silver skin if not using for ground beef, tenderize with baking soda or ground pineapple skins from your left over fresh pineapple. The most tender beef you’ll ever taste if you can cook it correctly.

Fajitas, Carne Asada, Stir Fry, Stroganoff etc

I saw this online and stopped by my local Sam's. I asked the butcher if he had "lifter" meat. He said they call it "stew meat" because this is what Sam's uses to make their stew meat. Per the title it's called "special trim" but also lifter meat. Blade/lifter cuts are the muscles that are immediately below and above the blade bone and related cartilage of the Primal Rib. This is a great cut of meat for a lot of dishes. It takes a little elbow grease and about an hour to process (goes faster with two people, one slicing, one vacuum sealing), but you can't beat the results. The pieces are well trimmed with very little silver skin to deal with and almost zero waste! It's so easy to cut across the grain, anybody can do this at home, no special skills required. We made 1/4" slices or maybe a little thinner, then rotated the meat 45 degrees and sliced it into bite size pieces. It's not necessary, but a little meat tenderizer mixed in before bagging helps keep the color and makes it even better by the time you use it. We use this sliced and diced meat for carne asada burritos, if you want that San Diego burrito flavor, this is it. It's also great for stir fry or stroganoff. Any sliced beef dish. I would imagine grilling it whole pieces first then slicing is amazing, but I haven't done it yet since the grill is put away for Winter. I also see marinating and grilling these pieces whole and then slicing for fajitas. It has a lot of possibilities and is a great deal. They seem to come in 12 to 14 lb crovac pouches, my last purchase was $49 for the bag. I'll be buying this every couple months for sure.

great cut for the price

Remember, it’s $3.50 ish a pound! This isn’t a premium steak cut or anything but great for stir fry and other methods of cooking if you know what you’re doing!

Not Brisket

I asked two different employees in the meat section if this was a brisket as I was planning on smoking one. The four briskets they had available that day were more fat than meat so that's why I was considering this one. Both employees assured me that it was. Well imagine my surprise when I opened the package and found a bunch of smaller chunks of meat. My family is going to eat it because I can't afford to throw away 83 dollars worth of meat but no one is going to be happy at my house. This was for a family get together. Thanks Sams, train your employees better.
