I ended up picking this cheese up as a quick meal snack for my kids and am I glad I did. Cheese melts easy and has a nice mild taste however if you look closely at pic 2 of the bag, it says use within 5 days of opening which is why there seems to be lots of reviews about mold. Only 2 weeks til expiration on the bag I purchased thru curbside pick up. Used only a portion of the bag within 4 days so I threw in the freezer, hope the consistency stays ok like other shredded cheeses do when frozen.

This cheese is quite flavorful and truly delicious. I use it to make quesadillas for family and friends and they love it. When you bite into it you can taste the flavor as the cheese stretches from you hand to your mouth. Definitely worth trying.
