Cheese melts easy and has a nice mild taste however if you look closely at pic 2 of the bag, it says use within 5 days of opening which is why there seems to be lots of reviews about mold. Only 2 weeks til expiration on the bag I purchased thru curbside pick up. Used only a portion of the bag within 4 days so I threw in the freezer, hope the consistency stays ok like other shredded cheeses do when frozen.

I ended up picking this cheese up as a quick meal snack for my kids and am I glad I did.
